Ingredients:
- 1 cup carrot, thinly sliced
- 1 cup finely chopped capsicum
- 1 cup finely chopped broccoli
- 1/2 cup finely chopped cabbage
- 1/2 cup spring onion stalk
- 2 tbsp roasted crushed peanuts
- 4 cups hot water
- 1 tsp salt
For the dressing:
- 2 tbsp oil
- 1/2 mustard sauce
- 1 tsp cumin powder
- 2 tbsp lime juice
- 1 tbsp cumin seeds
- 1/4 tsp thyme
- 1 tsp white pepper powder
- 2 tbsp coriander leaves
- A pinch of sugar
- Salt to taste
Procedures:
- Wash all the vegetables thoroughly and drain.
- Boil the water and add 1 teaspoon salt to it. Soak the vegetables in salted water for 10 minutes.
- Drain off the water and keep the vegetables aside.
- Heat the oil, add the cumin seeds to it.
- Remove from the fire, cool and add rest of the ingredients for the dressing to it.
- Place the vegetables in a greased baking dish and bake in a hot oven at 200 degrees celcius for 5 minutes.
- Remove from the baking tray, mix the dressing.
- Then sprinkle the crushed peanuts on it and serve.
