Ingredients:
- 1 Chinese okra or hairy melon(patola)
- 3 red chillies
- 300g clams
- 1 tbsp minced garlic
- 1 tbsp minced ginger
Seasoning
1 tsp each of salt, vinegar and sugar
Procedures:
- Soak clams in water to eject sand, dirt etc. Steam clams until all shells open. Remove clam meat. Reserve 3 tbsps liquid from steamed clams for later use.
- Peel Chinese Okra, rinse, slice and blanch in boiling water until done. Remove and drain. Remove seeds from red chillies and shred finely.
- Heat 2 tbsps oil in a wok and saute garlic and ginger until fragrant. Add in reserved liquid in procedure 1.
- Bring to boil and remove from heat. Add in seasoning and all the remaining ingredients. Combine well. Dish up and serve.
